Recent Obsessions: Portlandia, Ebert Presents at the Movies, Heritage Weis Reserve cheddar
February 3, 2011
After being informed more than once that “the cheese press” has been very enthusiastic about this cheddar, we were almost reluctant to join the chorus — that ridiculous “I only like bands before they're popular” kind of thing. But we really were wowed by the Heritage Weis Reserve from Red Barn Family Farms, made in northeast Wisconsin. At the Isthmus Beer and Cheese Festival this weekend, Red Barn had a range of creamy cheddars for tasting, from new and mild to this “Old World Style Reserve” . The reserve had a nutty flavor and a long finish even at only 18 months old. Red Barn cheeses were selling for $4-$5 at the fest; find them at Woodman's East, Metcalfe's Sentry in Hilldale, the Regent Market Co-op and Jenifer Street Market. Red Barn is online at redbarnfamilyfarms.com>.
